The province of Piacenza boasts the Protected Denomination (PDO) for three products derived from pork processing. Traditionally, the production of cold cuts dates back to the times of Hannibal, in the third century BC.
Over the course of the centuries, the techniques have been refined, the animals have changed, a consortium for the protection of cold cuts has been created and regulations have been drawn up to maintain the quality of the final products: salami, pancetta and coppa.
Every year, pancetta is the protagonist of a festival in the town of Ponte dell'Olio, on the foothills of Val Nure, the Piacenza valley characterized by natural environments, lakes and intact mountains.
During the day of the event: tastings, themed exhibitions, workshops for children and a food court.
In conjunction with this event the Spring Festival is held: an exhibition market with stalls of handicrafts and objects of quality.
