In the hills south of Bologna, amid vineyards, cultivated fields, and small olive groves, the “Olio dei Colli di Bologna IGP” is produced. This extra virgin olive oil captures the aromas and flavors of a region on the northern edge of the Mediterranean olive-growing area.
Olive cultivation has ancient roots here, documented as far back as Roman and medieval times. After centuries of gradual decline, due primarily to harsh climatic conditions, this tradition has been revived thanks to the restoration of local varieties and the dedication of producers. This journey of rediscovery culminated in the IGP designation.
“Olio dei Colli di Bologna” PGI is characterized by a balanced and harmonious flavor, with fruity notes accompanied by hints of bitterness and spiciness. Its aromatic profile evokes fresh grass, artichoke, almond, and tomato—a reflection of its connection to its region of origin.
It best expresses its character when used raw: a drizzle of oil on a slice of toasted bread is all it takes to appreciate its aromas and nuances.
It pairs well with vegetables, soups, legumes, and fresh cheeses, but also complements pasta dishes, white meats, and fish. Thanks to its balanced flavor, it enhances ingredients without overpowering their tastes, bringing a little taste of the Bolognese hills to the table.
